Queen Street is getting a new retro-inspired pool bar, Hibiscus Room

Does it get more Queensland than a Moreton Bay bug cocktail by the pool?

Inspired by one of Brisbane’s most popular past venues, Hibiscus Room at Hyatt Regency Brisbane is bringing a taste of the glam ’70s to Queen Street Mall!

Located on level four around the infinity pool, Hibiscus Room is all about celebrating Queensland with a retro twist, harkening back to Lennons’ (the original hotel on the Hyatt Regency Brisbane site) original Hibiscus Room, which was all the rage in the ’70s and ’80s.

Former Mandarin Oriental chef Rickey Cheung has crafted a menu that’s packed with some nostalgic heavy-hitters, with smaller plates including a Moreton Bay bug cocktail, Scotch egg with curry mayonnaise, and Mooloolaba yellowfin tuna tartare.

Mains and share dishes include a classic charcoal barbie, with proteins like king prawns with chilli and mango or Rockhampton beef rump cap with mustard and green onions, and a casserole du jour (because it ain’t a ’70s party without a casserole!), which will offer a mixed seafood pot for the summer and heartier options in the cooler months.

From the bar, Queensland produce-inspired cocktails take centre stage, as well as a range of local and internally sourced wines and beers. Hibiscus Room is also set to host a Boxing Day poolside brunch (hangover recovery, anyone?) and a fab NYE event with an eight-piece band—you can learn more and book in on their website when it goes live soon!

Hibiscus Room will open at Hyatt Regency Brisbane on Wednesday, December 8, and will open Wednesdays-Sundays. Check out their website to learn more here!
