W Brisbane’s Living Room Bar is RE-imagining it's Cocktail Menu with a Conscious Twist

W Brisbane has partnered with award-winning international bartender Matt Whiley, to deliver an extraordinary menu of conscious cocktails.

Spearheading a global movement to revolutionise how bars approach sustainability and waste, Matt Whiley owner of World’s Best Bar ‘RE’, has partnered with The Living Room Bar manager Francesco Squllacioti to bring ‘RE’-style cocktails to W Brisbane guests. 

This six-month partnership will RE-imagine the way cocktails are created with a menu that creatively repurposes typically wasted ingredients from W Brisbane’s kitchens into unforgettable ‘conscious cocktail’ experiences, setting a new standard for eco-conscious luxury. Ingredients such as potato skins, pineapple rind, pumpkin seeds, cauliflower cream and carrot peel which would have otherwise been discarded will be used to create eco-conscious libations. 

Ingredients will undergo fermentation to breathe new life into the otherwise discarded produce. The menu features ‘RE-style’ classic cocktails including the Lamington Negroni and The Margarita Spritz. More inventive and innovative tastes include ‘The Seed Money’ utilising blackened pumpkin seeds, ‘Space Plant 60’ using roasted cauliflower cream and bread caramel, ‘Tip of the Iceberg’ reimagines salad leaves with caramelised white chocolate, ‘Shroom Service’ blends onion ash, mushroom honey, and pineapple skin, and finally, ‘Malt Disney’ uses burnt potato skin and carrot vinegar caramel. 

The Living Room Bar’s commitment to sustainable practices doesn’t stop there. Menus will be printed on paper made from recycled coffee cups and cocktails served on coasters made from 100% recycled plastic. Ingredients used in W Brisbane’s restaurants are also sourced locally where possible, and any food waste is composted on-site. Excess food is donated to food rescue charity OzHarvest.
