Soleil has already gained itself a reputation for awesome cocktails, never ending nightlife and fabulous Capri Sundays by the pool, but we could happily spend from dawn until dusk at this stylish rooftop bar. Drink in hand, food baby in pants, we never tire of the atmosphere or the spread of drool-worthy food and drinks on offer throughout the day for breakfast, lunch and dinner.
It doesn’t matter what time you start your day, whether you’re in the office by 8am or don’t have a care in the world until midday. Soleil is open from 7am, waiting to help you out with a morning fix of breakfast yummies and adorn your empty, coffee starved hand with a latte. Begin your day right with one of their toasted fruit and nut loaves with figs, hazelnuts and apricots, served with whipped butter and condiments, or opt for a fresh start of seasonal fruit and natural yoghurt. We’ll be over by the basket of pastries we ordered.
Or, if a later affair is more your style, Soleil really kick things off after midday, with a noon menu to knock your socks off (plus, come noon, it’s totally acceptable to start downing their delicious cocktails). For work lunches or weekend shenanigans, you can’t say no to a double serving of Gypsy’s Tears, a combination of Hayman’s London Dry Gin, Pimms, lemon, ginger, lemongrass, strawberry, orange, cucumber and mint, served with lemonade or ginger ale. Nor will you be able to resist a plate full of baby squid, stuffed with Morton Bay bug and saffron risotto.
Kick on into the night with a plate of oysters, and choose drink after drink from their massive selection of summer cocktails by the pool. With the Brisbane summer as hot as it is, we can’t think of a better place to cool down and spend the best part of the day indulging in the city’s finest at Soleil Pool Bar.
