
Adding to Brisbane’s impressive list of new hotel restaurants, Signature is writing its delicious future on the wall of the swanky Emporium Hotel South Bank.
Opening on Tuesday, May 21, Signature’s striking marble bar, intricate 150-year-old stained glass shopfront, and custom-made lighting installation of 1000 hand-blown glass baubles are right at home among Emporium’s existing stunning venues Belle Epoque, The Terrace, and Piano Bar.
In the kitchen, husband and wife team Chris Norman and Alex Liddle (executive chef and executive sous chef) are riding the modern Australian train, with a focus on premium Aussie producers. Big names like Abrolhos Islands scallops, Eugowra quail, Murray River cod, and Flinders Island lamb appear on the menu, with dishes meeting Chris’ goal of delivering “ongoing creativity to present a bespoke and vibrant culinary experience.”
Signature (sorry) dishes include blueberry-cured ocean trout with heirloom tomato, verjus cucumber, blueberry and crème fraiche, Flinders Island lamb with globe artichoke, glazed shallots, zucchini and black olive, and chestnut pudding with Tasmanian leatherwood honey and buttermilk (we’re just going to go ahead and recommend the tasting menus, starting at five-courses for $75).
The vegetally-inclined aren’t left out, with a dedicated vegan menu featuring fresh takes on plant-based dining like roasted globe artichoke with pine mushroom duxelle, Swiss chard, and farro, and decadent desserts like black fig and guava with maple cheesecake, verjus, and dill sablé.
When it comes time to sip, Signature has you covered; a custom-built wine cellar (christened The Library) houses over 6000 bottles of Australian and international drops, with 200 magnums and floating wine racks guaranteed to have you feeling a little thirsty.
For special occasions, a private dining room with space for 12 lucky guests has its own tailored wine display, as well as a hidden door (!!) which opens to reveal the display kitchen – chef’s table dreams fulfilled!
