Moyle, best known for his elemental, fire-driven cooking style at Hobart’s acclaimed Franklin, now channels that philosophy into The Salty Mangrove in the Northern Rivers. His approach celebrates honest, produce-led cooking with a deep respect for Australian seafood and coastal traditions. For Bar Miette’s takeover, Moyle curated a menu capturing the spirit of his Balearic-inspired kitchen.
Diners can expect vibrant plates such as taramasalata with focaccia, raw tuna and bottarga, lamb neck skewers with olive and seaweed, and snapper sandwiches with creamy remoulade. Whole grilled mud crabs, fired over the hibachi, promise to be the showstopper, while hand-cut chips and braised wild greens round out the spread.
