While the suburb has long held an affinity with great watering holes and restaurants (the word Woolloongabba itself means ‘whirling water’, and Corella a local indigenous waterhole), Paul McGivern and Bailee Dewes’ newest addition Corella is set to test the waters and meander a new path in the suburban restaurant scene.
Much like its sister restaurants La Lune and McGivern’s previous brainchild The Wolfe, Corella’s interior exudes luxury, with its minimalist industrial elements selling passers-by a straight-up mood.
If looks could kill, then Corella is serving up a double dosage with its heart-stopping design and dangerously divine menu. Fans of La Lune will recognise new takes on delicious favourites, such as the kangaroo tartare with oyster emulsion and rye cracker, or kingfish crudo with pickled daikon and green sauce.
Also a feast for the eyes (and tastebuds) is the John Dory, swimming in creamy saffron sauce, braised witlof, and sea herbs, which would pair perfectly with any one of Corella’s fifty bottles of wine on hand – and yes, we plan on trying every one!
For those who’d rather BYO than order merlot, Corella has reserved Wednesdays as bring-your-own wine nights and are set to serve a number of delicious offers as well. Think a three-course prix fixe menu for just $39 and five-course tasting menus for just $75.
A spot we’d happily head to for a glass and then stay the whole evening, the restaurant is always on the move, and ever-evolving with menu changes regularly made under the guidance of head chef Callum Gray.
A little birdie has told us that Corella is opening this Thursday, March 14! Will we see you there?
