How to make the perfect acai bowl

For many of us, the acai berry is a mysteriously delicious creature that has been sourced from the far reaches of the Amazonian rainforest and nestled its healthful-self into everything from baked treats to infused vodka. We don’t really know what it looks like; some don’t even know how to say it (akayy? akie?), all we know is that it’s a ‘superfood’, and it’s berry delish. Unless you’ve been living under a rock, you’d have realized that there is no more delicious way to consume this cancer fighting, energy boosting, anti-aging little berry than in an acai bowl. Thankfully, there is no shortage of these super-bowls around Brisbane with many of our favourite breakfast destinations offering perfectly purple bowls topped with mountains of muesli, fresh, juicy fruit and an extra sprinkle of superfoods. Let’s be real though, our acai bowl budget can get a little out of control (nowhere in the fine print does it state ‘super cheap’) and we have to settle with breakfast at home every now and again. But before you reach for the Weet-bix, we’ll let you in on a little secret: these soulful bowlfuls are a lot easier to make than you might think. Don’t believe us? Here’s a recipe! When it’s loaded up with your favourite toppings, not only will you have a super delicious breakfast, but it’ll be totally #instaworthy too.

Ingredients

The essentials:
  • 1/3 cup frozen blueberries
  • 1/3 cup frozen raspberries
  • 1 large frozen banana (sliced)
  • 1 tablespoon almond butter
  • 1 cup unsweetened almond/coconut milk/coconut water
  • 4 tbsp açai powder/1 frozen acai pack
  • A dash of cinnamon
Some oh-so-delicious optionals: For a creamy, chocolately bowl, replace the berries with:
  • 1 tbsp cacao powder
  • ¼ ripe avocado
  • 2 pitted Medjool dates
For an extra dose of green goodness, replace ½ the berries with:
  • 1 pitted Medjool date
  • ½ cup spinach/kale (stalks removed)
For a tasty nutty-vanilla like flavour (and an extra energy boost):
  • 1 tsp maca powder

Method

Pop all your ingredients into a high-speed blender and blend until smooth. Once it has reached the perfect consistency, pour into little bowls (or one big bowl, we won’t judge!) and sprinkle ‘til your heart’s content with the some of the following toppings…
  • Fresh fruit: because what’s more appealing that extra sliced banana?
  • Granola: to put a pep-ita into your step
  • Cacao nibs: for a mild, chocolately crunch
  • Roasted coconut chips: for an extra dose of healthy fats
  • Nut butter: (is there any better butter?)
  • Goji berries: so your tummy can do a little antioxi-dance
  • Chia seeds: to cheer you up with a healthy little dash of omega 3
  • Bee pollen: for a dose of amino acids to keep you buzzing all day
