Melt Brothers | CBD

Inspired by the range of delicious comfort food on offer in New York’s alleyways, Melt Brothers is here to realise all your melty cheesy dreams. Melt Brothers offers a variety of mouth-watering cheesy melts, such as the classic Mouse Trap, comprising of mozzarella, aged cheddar, thyme and Dijon mustard and the uber drool-worthy M.C. Cheesy, loaded with mac and cheese, maple bacon, smoky BBQ sauce, aioli, mozzarella and aged cheddar – how gouda! Plus, make sure to pair whatever melt you choose with an equally cheesy side, like the crispy mozzarella sticks or extra-cheesy loaded tater-tots, as you can never have too much cheese!

Za Za Ta | Fortitude Valley

It is at Ovolo The Valley’s Za Za Ta, which skilfully blends Middle Eastern spice with Mediterranean style, where you’ll find the toastie with the mostie. In particular, the decked-out wagyu bits, pickled sugar loaf cabbage and challah toastie will be making you say ‘yes cheese’ when the opportunity to upgrade your classic cheesy jaffle is presented.

Dovetail on Overend | Norman Park

If our list of gluten-packed goodness has you wanting a pita the action but you’re body says ‘dough way!,’ you can get your gluten-free toastie and eat it too at Dovetail on Overend, with Bangalow ham, gruyere cheese and mustard crammed between sourdough or gluten-free bread.

Famished on Frasers | Ashgrove

Anyway you slice it, Famished on Frasers’ pulled pork shoulder jaffle is a brunch worth getting up for. Bursting with fried egg, crumbled Mersey Valley cheddar and hollandaise, trust us when we say you knead this in your life.

Pearl Cafe | Woollongabba

We can’t baguette the delicious new addition to Pearl Café’s menu. Braised pork with pickled cabbage, mozzarella, with a swab of mayonnaise and a fried egg on deliciously crusty French bread made for a toastie that oozes sophistication.

The Cheese Pleaser | CBD

An organic extension of the family-run catering and cheese business established in 2014, The Cheese Pleaser is an artisanal cheese shop tucked away in Brisbane’s CBD. Beyond a one-stop shop for those looking for artisan cheeses, wine, breads and take-home meals, The Cheese Pleaser also offers an array of incredibly pleasing gourmet cheese toasties, with must-tries being the signature four cheese toastie and house made croque monsieur.

The city’s latest picture-perfect pop-up bar, Fredricks, is not just home to the signature Frosty Fruit spritz, but also serves up one hell of a toastie – think spaghetti Bolognese, and gruyere and greens. 

Kimchi Cheese Smile | Woollongabba

A Korean inspired contemporary restaurant using the finest ingredients, Kimchi Cheese Smile has not only brought an entirely new flavour to East Brisbane, but also one heavenly toastie that is sure to make you smile. Featuring on the restaurant’s weekend brunch menu you’ll find the bulgogi panini, comprising of Korean soy sauced beef, Turkish toast, cheddar, tomato, red onion, guindillas and avocado – sweet baby cheesus it’s tasty!

Maker | South Brisbane
