Brisbane food lovers are in for a fiery treat as Izakaya Publico, located inside Hotel Indigo, launches its Wagyu Beef Trilogy – a premium dining experience celebrating the art of Japanese flame grilling.

The new indulgent offering is priced at $80 per person, with a minimum of two guests, making it perfect for date nights, mate nights, or if you’re just looking for an immersive flavour-packed wagyu experience. 

At the heart of this experience is Westholme Wagyu, sourced from the nutrient-rich pastures of Northern Queensland and renowned globally for its exceptional marbling, flavor, and tender texture. Westholme is known to produce some of the finest wagyu in the world, guaranteeing visitors of Izakaya Publico a feast for the palette. 

The Wagyu Beef Trilogy features three distinct cuts, each cooked using a traditional Japanese flame technique:

  • Warayaki Brisket 4+, seared over flaming hay for a smoky, aromatic finish.

  • Kuro-Zumi Rump 6+, grilled over black charcoal for deep, charred richness.

  • Makibi Striploin 7+, finished over woodfire for bold, tender results.

The Wagyu Trilogy arrives on a visually stunning share board, layered with thick slices of wagyu and complemented by vibrant sides including yuzu-glazed carrots, spiced cauliflower, jagaimo baked potato, and a rich minted koji beef jus poured at the table. The combination of flavours, presentation, and moody art-filled setting creates a theatrical, immersive dining moment that’s both refined and relaxed.
