Bringing his expertise and je ne sais quoi to the well-loved restaurant, Michelin-trained French chef Clément Chauvin plans to continue the Montrachet legacy and promises a fresh perspective to modern French cuisine and an elevated dining experience to boot (oui oui!)
Having worked in Michelin-star restaurants and with awards under his belt like Best Chef of the Year by the Australian Hospitality Awards and the coveted Best Restaurant of the Year title from the Restaurant and Catering Awards, Montrachet is in safe hands, to say the least.
Joined by front-of-house and sommelier savant Remon Van de Kerkhof, diners can expect a renaissance of Montrachet’s menu with innovative creations joining beloved classics. The iconic double crab soufflé and French escargot remain, alongside staples like bouillabaisse and steak frites – each with a modern twist.
The main event, of course, is the exciting new dishes including Le Duo D’agneau de Printemps (spring lamb two ways), Le Pithivier (roasted pumpkin and mushroom pie topped with sage and brown butter crumble), and a hearty Le Boeuf-en-Croûte (beef Wellington with a rich red wine jus).
For dessert, the beloved crème brûlée is still a staple, but Chef Clément’s signature Soufflé à la Passion – a passionfruit soufflé with a chilli explosion and coconut sorbet – offers a bold new treat.
