Vaquero

Vaquero (meaning ‘herdsman’) is a sleek, modern and decidedly delicious tapas bar which tributes Spanish cuisine with an Australian influence. You would never guess such a sophisticated venue could hide behind a meat counter, but you’ll be pleasantly surprised once you make your way through the butcher and into the chic amber-lit bar, ready for an ultra-modern tapas experience.

The menu is designed to share, with smaller and slightly larger plates on offer and most available as gluten free if required. Don’t expect your usual ‘patatas bravas’ and tomato bread here – feast your eyes on the basque potato with fermented chilli and smoked butter or the hand stretched flat bread with fior de latte instead. And it wouldn’t be a tapas bar in a butcher without an ample supply of meat, including the likes of pork terrine, sous vide lamb saddle and dry aged beef of the day, but there are also a surprisingly diverse range of options for the pescetarians, like the manchego cheese custard with coal fired carrots, and sea scallops boudin with crispy cauliflower.
